Pacific Bluefin Tuna are hands down the best tuna in the world. The fish that we had the pleasure of breaking down are about 100lbs coming from Southern California waters.
The portions we have, coming from the belly loins of the fish, are the Akami section of the tuna, which is the "red meat" section or leaner pieces of the fish, perfect for sashimi, nigiri, crudo and tataki.
